I previously used an aluminum sheet with a slight bend, bolted down using the front passenger seat bolts. This allows you to still slide the seat back and forth.
Currently though, it's bolted to the tunnel.
And get one with a clasp that works, or as tinkerbell says, it will go flying in a crash. Tissue boxes flying from the rear parcel shelf have been known to injure occupants, so imagine what an extinguisher can do.
